This is really a twist on the Simple Salmon recipe. The tomato and pineapple salsa is a chunky one spiced up with chopped chilies and mint leaves. Truly a tasty dish with a good balance of sweet, sour, spicy on savory. And lunch under 30 minutes ;)Tomato and Pineapple Salsa
makes 2 cups
1 large red tomato, diced finely
1/2 onion, diced finely
1/2 cup of finely diced pineapples
15 mint leaves, torn
1 red chili, chopped finely
juice of 1/2 lime
1/2 teaspoon salt
1/2 teaspoon sugar
1 tbsp vinegar
Method:
The ingredients can also be blitz in a food processor.
Mix all the ingredients together well and let it sit for 15 minutes before topping it on your salmon.
The salsa also goes very well with steaks or just plain good ol' tortilla chips.
