The Yellow Squash + Tomato Sammy


The yellow squash sammy was created on a day when I realize I had a perfectly fine yellow squash lost at the back of my cupboard. And as such the Yellow Squash + Tomato Sammy was created, out of pity for the neglected gourd and out of hunger.

It's a nice change from the canned tuna, cold cuts and/or spam (or luncheon meat in some countries). This is a totally vegetarian sandwich filled with thick slices of beefy tomatoes, mozzarella and roasted yellow squash. Oh and a nice layer of basil to give it that rounded layer of flavor. You don't really miss the meat when you're chowing this down, surprisingly.

P ain't complainin' anyhow being the vegetarian that he is. In fact, he welcomed it and revoked his dislike for gourds because of their shape. Uhm...yeah.

So anyway, here's what you need:-

Roasted Yellow Squash:
1/2 a yellow squash, sliced
salt and pepper
olive oil to drizzle

Method:
Pop it into the oven for 35-40minutes in 375 degrees F


The Yellow Sammy Assembly:
Roasted yellow squash
1 ripe beefy tomatoes, sliced into 1cm thick
8 slices of mozzarella cheese
a handful of basil leaves
salt and cracked pepper
some olive oil to drizzle.

Method:
1. Toast 4 slices of bread.
2. Place 2 slices of tomatoes and 2 slices of mozzarella on each of the two slices of bread. Top with some basil.
3. Repeat the same for the yellow squash and mozzarella on the other two slices of bread. Top with some more basil.
4. Drizzle with some olive oil over the top and set the open face sandwiches in the broiler for 3 minutes.
5. Put the tomatoe+mozzarella side onto the squash and mozzarella side, push it down gently so they mingle.

Slice it up and eat as it is :D

You can also add your favorite condiments like mayonnaise, mustard or relish or oignon doux sauce etc. But I had it undressed and it was equally good!
