Nothing like Soup on a Rainy Day


Nothing is more comforting than soup on a rainy, cold day. Watching the droplets dripping down the window while the sky is cloudy grey can be quite depressing...but only if you let it :) My herb plants are keeping me all smiles and the hot bowl of miso soup just waiting to be slurped is equally as comforting.

This miso is like any other miso except that i topped with some sesame wakame, to give it a little bite and texture.

Simply boil 3 cups of water with 3 tablespoons of miso paste. You can use 1.5:1.5 of water and dashi stock if you have any but I'm just sticking with water. Once the water boils, stir in the miso paste and turn the heat down to low. Cut some soft tofu into cubes and chop some spring onion, place them in a bowl. Scoop the hot soup over the tofu and spring onions. You can drink your soup as it is or you can add some wakame, which is a type of seaweed and some sesame seeds in.

I'll share with you the recipe for that korean style sesame seed wakame salad soon... :)

I know, I'm just combining the best of both worlds hehe!
