Spaghetti: Tomato, Basil & Parmegiano!

Excuse the long absence...I've been so tired when I get online from my day's outing, i just couldn't be be arse to post about food the past few days. HOWEVER, I am back now and I want to catch up on the posts that I missed!

Tomato, Basil and Parmesan Fettucine

Alright, I'll start off with Spaghetti in Tomato, basil and parmesan sauce. It's SO simple to make, there is no excuse in having uninspired bottled sauces for your pasta. Hey, I've said this before and I'll say it again - if you're going to eat 3 times a day you might as well do it properly. Even if it's for a simple spaghetti and sauce. Nothing beats home cooked sauces - it gives it body, depth and flavor, even when it's simple ingredients like basil, tomatoes and parmesan. This dish is suitable for vegetarians as well.

Ingredients:

250 gram of spaghetti ( i used fettucine), cooked till al dente!
3 -5 tablespoon of pasta water, reserved from cooking the spaghetti
2 tablespoon olive oil
1.5 cup of homemade marinara sauce (or you can also use 1 can of diced tomatoes)
1 clove of garlic, minced
1 teaspoon dried basil
1/3 cup parmesan
1/2 teaspoon salt
1 teaspoon sugar
pepper to taste
1 handful of fresh basil for garnish, optional.

Method:

1. To cook the sauce, heat oil in a deep pan and saute till the garlic is fragrant.
2. Add your marinara sauce and let it simmer before adding your salt and pepper. Stirring occasionally.
3. After that, add your dried basil - rub them between your hands to help release the aroma before putting it in. Let it cook for a bout 5 mins more.
4. Add your spaghetti and mix to coat well with the sauce. Add in 3 tablespoon of your pasta water in first and mix well. If your pasta seems like they are sticking to each other a lot, add 1 tablespoon more until it reaches a rather wet (not soaking) consistency that is easy to eat with later.
5. Add your parmesan (reserve a little for garnish), and stir to coat well. If you have your fresh basil, you may add them now with a quick mix.
6. Serve it on a plate, sprinkle the remaining parmesan on top and some dried basil. Voila!

This meal is truly satisfying even for the non-vegetarians. You can whip this up in a big badge for party too...:)
